Beef Noodle Soup

This recipe
just takes minutes -- but tastes like it
simmered all day. It would make a wonderful
lunch.

ground
beef
|
|
|
1/2
cup
|
|
chopped
onion
|
|
|
2

|
cans (14-½ oz.
each) Italian
stewed
tomatoes
|
|
|
2
|
|
cans (10-½ oz.
each) condensed
beef broth,
undiluted
|
|
|
1
|
|
can (16 ounces)
mixed
vegetables,
drained
|
|
|
1
tsp
|
|
dried
oregano
|
|
|
1/2
tsp
|
|
salt
|
|
|
1/4
tsp
|
|
pepper
|
|
|
1
cup
|
|
medium egg
noodles
|
|
|
|
|
|
|
In a Dutch
oven or soup kettle, brown
beef and onion; drain. Add
tomatoes, broth, vegetables
and seasonings. Bring to a
boil; add noodles. Reduce
heat to medium-low; cover
and cook for 10-15 minutes
or until the noodles are
tender.
