Beef Noodle Soup

  

This recipe just takes minutes -- but tastes like it simmered all day. It would make a wonderful lunch.

 

 

1 pound 

 

ground beef

 

1/2 cup 

 

chopped onion

 

2

 

cans (14-½ oz. each) Italian stewed tomatoes

 

2

 

cans (10-½ oz. each) condensed beef broth, undiluted

 

1

 

can (16 ounces) mixed vegetables, drained

 

1 tsp 

 

dried oregano

 

1/2 tsp 

 

salt

 

1/4 tsp 

 

pepper

 

1 cup 

 

medium egg noodles

 

 

 

 

In a Dutch oven or soup kettle, brown beef and onion; drain. Add tomatoes, broth, vegetables and seasonings. Bring to a boil; add noodles. Reduce heat to medium-low; cover and cook for 10-15 minutes or until the noodles are tender.

 

 

Yield: 6-8 servings (2 quarts)
