Biscuit and Beef Cups   

 

Try this recipe when you need a quick and easy dinner idea.

 

 

3/4 lb 

 

lean ground beef

 

1

 

medium green bell pepper, seeded and diced

 

1/4 cup 

 

finely chopped peeled onion

 

1

 

bag (16 ounce) frozen mixed vegetables or peas and carrots, thawed

 

1/2 cup 

 

barbecue sauce

 

2 tsp 

 

brown sugar

 

1

 

(17.3-oz.) can refrigerated biscuits

 

3/4 cup 

 

shredded cheddar cheese

Preheat oven to 400°F.

Brown ground beef, bell pepper and onion in a medium skillet; drain, add thawed bag of vegetables. Stir in barbecue sauce and brown sugar; mix until thoroughly combined. Remove from heat.

Separate refrigerated biscuits, placing one in each of 8 ungreased muffin cups, pressing the dough up the sides to the edge of the cup.

Spoon beef mixture into cups and sprinkle with cheese. Bake for 12 minutes, or until biscuits are golden and cheese is melted.
