Caribbean Chicken Salad with Peanuts

The crunch of peanuts, sweet tang of chutney, and tropical papaya

mayonnaise

chutney

sugar

raspberry vinegar

curry powder

head romaine lettuce, torn in
pieces

In a blender or food processor combine peanuts,
mayonnaise, chutney, sugar, vinegar and curry powder; blend until smooth. Set aside.

serving plates. Top with chicken, papaya slices and raspberries; sprinkle with peanuts. Serve with
dressing.
