Garden Harvest Chili

  

If you have any zucchini or squash to use up this is a great chili for the job.

medium sweet red pepper, chopped

medium onion, chopped

garlic cloves, minced

 

2 Tbs 

 

vegetable oil

 

1 Tbs 

 

chili powder

 

1 tsp 

 

ground cumin

 

1 tsp 

 

dried oregano

 

2 cups 

 

cubed peeled butternut squash

 

1

 

can (28-oz) diced tomatoes, undrained

 

2 cups 

 

diced zucchinis

 

1

 

can (15-oz) black beans, rinsed and drained

 

1

 

can (8-3/4 oz) whole kernel corn, drained

 

1/4 cup 

 

minced fresh parsley

 

 

 

 

In a 3-qt. Dutch oven or sauce pan, sauté red pepper, onion and garlic in oil until tender. Stir in chili powder, cumin, oregano, butternut squash and tomatoes; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until squash is almost tender. Stir in remaining ingredients; cover and simmer for 10 minutes more.

 

 

Yield: 7 servings (1-3/4 quarts)
