Garden Harvest Chili

If you have
any zucchini or squash to use up this is a
great chili for the
job.

medium sweet
red pepper,
chopped
|
|

medium onion,
chopped
|
|
|

garlic cloves,
minced
|
|
|

Tbs
|

vegetable
oil
|
|
|

Tbs
|

chili
powder
|
|
|

tsp
|
|
ground
cumin
|
|
|
1
tsp
|
|
dried
oregano
|
|

cups
|
|
cubed peeled
butternut
squash
|
|
|
1

|
can (28-oz)
diced tomatoes,
undrained
|
|
|
2
cups
|
|
diced
zucchinis
|
|
|
1
|
|
can (15-oz)
black beans,
rinsed and
drained
|
|
|
1
|
|
can (8-3/4 oz)
whole kernel
corn,
drained
|
|
|
1/4
cup
|
|
minced fresh
parsley
|
|
|
|

|
|
In a 3-qt.
Dutch oven or sauce pan,
sauté red pepper, onion and
garlic in oil until tender.
Stir in chili powder, cumin,
oregano, butternut squash
and tomatoes; bring to a
boil. Reduce heat; cover and
simmer for 10-15 minutes or
until squash is almost
tender. Stir in remaining
ingredients; cover and
simmer for 10 minutes
more.
