Hamburger Cabbage Casserole   

 

I think this casserole would also be good using any cream soup (such as cream of chicken) in place of the condensed tomato soup.

 

 

1 pound 

 

ground beef

 

1

 

large onion, chopped (1 cup)

 

1/2 cup 

 

uncooked instant rice

 

1/2 teaspoon 

 

salt

 

1/2 teaspoon 

 

pepper

 

1

 

can (10 3/4 ounces) condensed tomato soup

 

1/4 cup 

 

water

 

4 cups 

 

coleslaw mix or shredded cabbage

Heat oven to 400°

Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients. Spoon into ungreased 2-quart casserole. Cover and bake 45 minutes or until hot and bubbly.

Preparation time: 10 minutes

Cooking time: 45 minutes
