Hot Dog and Potato Casserole

You could add one bag of frozen peas, mixed veggies, or
green beans to the sauce and the above recipe would become: Hot Dog and Potato One-dish Meal.

can cream of celery soup
|
|
|
3/4 cup
|
|
milk
|
|
|
1/4 cup
|
|
onions
|
|
|
2 teaspoons
|
|
prepared mustard
|
|

medium potatoes, cooked and
diced

package hot dogs, slit
lengthwise
|
|

1/4 cup
|
|
shredded Cheddar cheese

Combine soup, milk, onion and mustard in blender or
food processor. In a 2 quart casserole layer potatoes on bottom, then hot dogs; pour sauce over all. Bake in a
400° oven for about 30 minutes. Sprinkle cheese over all the last 5 of baking.

I made this recipe recently and I added about 1/2 cup
sour cream to the potato mixture for added creaminess. You could also make it plain yogurt. I also substituted
frozen hash browns for the 4 med. potatoes just to make it quicker. You might have to bake it for slightly
longer.
