Italian Vegetable Focaccia Sandwich   

 

An unique way to serve a meatless sandwich.

cheese and herb facaccia bread (10 - 12 inches in diameter) cut horizontally in half

 

2 cups 

 

shredded mozzarella cheese (8 ounces)

 

2 cups 

 

deli marinated Italian vegetable salad, drained and coarsely chopped

Heat oven to 400°

Place bottom half of bread on cookie sheet. Sprinkle with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese. Top with top of bread.

Bake 12 - 15 minutes or until golden brown. Cut into wedges.

 

 

Servings: 4

Preparation time: 5 minutes

Cooking time: 30 minutes
