Italian Vegetable Focaccia Sandwich

An unique way to serve a meatless sandwich.

|
cheese and herb facaccia bread (10 -
12 inches in diameter) cut horizontally in half
|
|
|
2 cups
|
|
shredded mozzarella cheese (8
ounces)
|
|
|
2 cups
|
|
deli marinated Italian vegetable
salad, drained and coarsely chopped
|
|
|
|
|
|
|

Heat oven to 400°
|
|

Place bottom half of bread on cookie sheet. Sprinkle
with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese. Top with top of
bread.

Bake 12 - 15 minutes or until golden brown. Cut into
wedges.
