Marinated Sesame Beef Stir-Fry  

 

Stir-fry's are a wonderful way to cook. It's not only fast and easy but healthy too.

 

 

For the marinade:

 

2 tablespoons 

 

reduced-sodium soy sauce

 

2 tablespoons 

 

cornstarch blended with 1/4 cup water

 

2 tablespoons 

 

peanut or vegetable oil

 

1 tablespoon 

 

dry sherry

 

1/2 teaspoon 

 

sugar

 

1-1/2 pounds 

 

boneless sirloin or flank steak, cut diagonally into thin 2-in. strips

 

1 cup 

 

long-grain rice

 

For the sauce:

 

1/3 cup 

 

reduced-sodium soy sauce

 

2 tablespoons 

 

dry sherry

 

1-1/2 teaspoons 

 

chili oil or 1-1/2 teaspoons peanut oil blended with 1/4 teaspoon hot pepper sauce

 

1 tablespoon 

 

cornstarch blended with 1/4 cup beef broth

 

2 tablespoons 

 

Oriental oyster sauce, optional

 

For the stir-Fry:

 

4 tablespoons 

 

peanut or vegetable oil

 

1 tablespoon 

 

minced fresh ginger

 

1 tablespoon 

 

minced garlic

 

1-1/2 pounds 

 

asparagus, cut into 1-1/2-inch lengths, or 1 package (10 oz) frozen cut asparagus, thawed

 

1/8 teaspoon 

 

salt

 

1/2 cup 

 

beef broth

 

1 tablespoon 

 

Oriental sesame oil

 

2 tablespoons 

 

sesame seeds

 

 

 

 

For the marinade:

In a medium-size bowl, combine the soy sauce, cornstarch, oil, sherry, and sugar. Add the beef and marinate for 20-30 minutes at room temperature. Meanwhile, cook the rice according to package directions.

For the sauce:

In a medium-size bowl, combine the soy sauce, sherry, chili oil, cornstarch mixture, and, if desired, the oyster sauce, and set aside.

For the stir-fry:

Heat 2 tablespoons of the peanut oil in a 12-inch nonstick skillet or wok over moderately high heat for 1 minute. Add the beef and brown for 2-3 minutes, transfer to a plate.

Heat the remaining 2 tablespoons peanut oil in the skillet for 1 minute. Add the ginger and garlic and stir-fry for 30 seconds. Add the asparagus and salt and stir-fry for 1 minute. Add the stock, bring to a boil, cover, and steam for 1 minute. Uncover, return the beef to the skillet, and stir-fry for 30 seconds. Add the sauce and cook, stirring constantly, for 1-2 minutes or until thickened. Add the sesame oil and sprinkle the sesame seeds on top. Serve over the rice.
