Minestrone with Turkey Meatballs

This is a wonderful one-dish meal soup. You can
substitute either kale or broccoli for the zucchini or green beans.
|
|
|
|
|
|
For the
Meatballs:
|
|
|
12 oz
|
|
ground turkey
|
|
|
1/4 cup
|
|
grated Parmesan cheese
|
|
|
1
|
|
large egg, lightly beaten
|
|
|
2 Tbs
|
|
dried breadcrumbs
|
|
|
2 Tbs
|
|
minced parsley
|
|
|
1 Tbs
|
|
water
|
|
|
For the
Soup:
|
|
|

|
|
olive oil
|
|
|

|
|
cloves garlic, thinly
sliced
|
|
|

|
|
medium-size zucchinis, halved
lengthwise and sliced 1/4 inch thick
|
|
|
1/2 tsp
|
|
dried rosemary, crumbled
|
|
|
6 oz
|
|
mushrooms, thinly sliced
|
|
|
3/4 cup
|
|
canned crushed tomatoes
|
|
|
4- 1/2 cups
|
|
Chicken Stock or 2-1/2 cups chicken
broth plus 2 cups water
|
|
|
8 oz
|
|
green beans, cut into 1-1/2-inch
lengths
|
|
|
6 oz
|
|
spaghetti, broken into 3-inch
lengths
|
|
|

can (10-1/2 ounces) cannellini (white
kidney beans), drained and rinsed
|
|
|

minced parsley
|
|
|

For the meatballs:

In a medium-size bowl, combine the turkey, cheese,
egg, bread crumbs, parsley, and water. Shape into walnut-size meatballs and set aside.

For the soup:

Heat the oil for 1 minute in a large saucepan or
5-quart Dutch oven over low heat. Add the garlic and sauté for 1 minute, then add the zucchini and rosemary
and sauté, stirring occasionally, until crisp-tender -- about 5 minutes.

Add the mushrooms, cover, and cook until the
mushrooms are tender -- about 7 minutes. Stir in the tomatoes and stock and bring to a boil over high heat.
Add the green beans and spaghetti, cover, and boil for 10 minutes.

Add the meatballs and cannellini, lower the heat to
moderate, cover, and simmer until the meat-balls are cooked through and the beans are hot -- about 4 minutes.
Sprinkle with the parsley and ladle into bowls.

Servings: 6
|
|
Yield: 1-1/2 quarts
