Oriental Pork and Pasta one-dish meal

  

You could also substitute 12 oz. chicken or turkey cutlets for the pork in this dish.

 

 

12 ounces 

 

pork tenderloin, trimmed of fat and cut into thin 2-inch strips

clove garlic, minced

 

1 teaspoon 

 

ground ginger

 

3 tablespoons 

 

reduced-sodium soy sauce

 

2 tablespoons 

 

cornstarch

 

1 cup 

 

chicken broth or water

 

1/4 teaspoon 

 

hot red pepper sauce

 

1 tablespoon 

 

Oriental sesame oil, optional (but oh so good!)

 

8 ounces 

 

thin spaghetti

 

2 tablespoons 

 

vegetable oil

 

4 ounces 

 

mushrooms, thinly sliced, or 1- 6 oz can button mushrooms, drained

large carrot, peeled and coarsely shredded

 

1 9 oz package 

 

frozen snow peas, thawed and drained

Place the pork in a small bowl and add the garlic, ginger, and 1 tablespoon each of the soy sauce and cornstarch. Toss well and set aside. In a second small bowl, combine the stock, red pepper sauce, remaining soy sauce and cornstarch , and, if you like, the sesame oil; set aside.

Cook the spaghetti according to package directions. Meanwhile, heat the vegetable oil in a 12-inch skillet over moderate heat for 1 minute. Add the pork mixture and stir-fry for 5 minutes. Add the mushrooms and carrot, then quickly stir the reserved stock mixture and pour it into the skillet. Bring to a boil, then cook and stir for 1 minute. Stir in the snow peas and cook, uncovered, for 1 minute; remove from the heat.

Drain the spaghetti well, mound on a large, deep platter, ladle the skillet mixture on top, and serve hot or at room temperature.
