Thai Chicken Pizza   

 

For those who love Thai food this is an unique recipe that is quick and easy!

flour tortillas (8 to 10 inches in diameter)

 

2/3 cup 

 

creamy peanut butter

 

1/4 cup 

 

soy sauce

 

2 tablespoons 

 

seasoned rice vinegar

 

2 teaspoons 

 

sugar

 

3 cups 

 

shredded Mozzarella cheese (12 ounces)

 

2 cups 

 

chopped cooked chicken breast

package (16 ounces) frozen stir-fry vegetables, thawed

Heat oven to 400°

Place tortillas on ungreased cookie sheet. Bake 5 minutes.

Mix peanut butter, soy sauce, vinegar and sugar; spread over tortillas. Top each with 1/4 cup cheese. Spread chicken and vegetables evenly over tortillas. Sprinkle with remaining 1-1/2 cups cheese.

Bake 10-15 minutes or until pizzas are hot and cheese is melted.
