Thai Chicken Pizza

For those who love Thai food this is an unique recipe that is
quick and easy!

flour tortillas (8 to 10 inches in
diameter)
|
|
|
2/3 cup
|
|
creamy peanut butter
|
|
|
1/4 cup
|
|
soy sauce
|
|
|
2 tablespoons
|
|
seasoned rice vinegar
|
|
|
2 teaspoons
|
|
sugar
|
|
|
3 cups
|
|
shredded Mozzarella cheese (12
ounces)
|
|
|
2 cups
|
|
chopped cooked chicken
breast
|
|
|

|
|
package (16 ounces) frozen stir-fry
vegetables, thawed
|
|
|
|
|
|
|

Heat oven to 400°
|
|

Place tortillas on ungreased cookie sheet. Bake 5
minutes.

Mix peanut butter, soy sauce, vinegar and sugar;
spread over tortillas. Top each with 1/4 cup cheese. Spread chicken and vegetables evenly over tortillas.
Sprinkle with remaining 1-1/2 cups cheese.

Bake 10-15 minutes or until pizzas are hot and cheese
is melted.
