Turkey Loaf Deluxe

  

This is a low-fat recipe. You can substitute a combination of ground pork, beef, or veal for the turkey.

vegetable oil

medium-size all-purpose potatoes, peeled and sliced 1/4 inch thick

medium-size sweet green peppers, cored, seeded, and thinly sliced

medium-size yellow onions, 1 thinly sliced, 1/2 finely chopped

1 pound 

 

ground turkey

 

1/2 cup 

 

dry breadcrumbs

 

1/4 cup 

 

minced parsley

 

1 tablespoon 

 

Worcestershire sauce

medium-size zucchinis, thinly sliced

tomato sauce

Preheat the oven to 400°. In a greased medium-size roasting pan, mix the oil, potatoes, green peppers, and sliced onion. Sprinkle with 1/4 teaspoon of the salt and 1/8 teaspoon of the salt and 1/8 teaspoon of the black pepper and bake, uncovered, for 20 minutes.

In a large bowl, beat the egg lightly. Add the turkey, breadcrumbs, chopped onion, parsley, Worcestershire sauce, and remaining salt and pepper, and combine. Shape the mixture into an 8" x 5" x 3" loaf.

Reduce the oven temperature to 350°. remove the roasting pan from the oven, add the zucchini, and mix well, then push the vegetables to the sides of the pan. Place the turkey loaf in the center and pour the tomato sauce over all.

Return the pan to the oven and bake, uncovered, stirring the vegetables occasionally, until the turkey loaf is no longer pink on the inside and the vegetables are tender -- about 35 minutes more.
